Italian Food The Old School Way

You can call it potatoes and eggs and you would be correct. But, in the old days and even now Italian families, (and every other family for that matter), need to stretch food and make it appealing and appetizing to the family. In comes the Fritatta. Not quite scrambled eggs with potatoes, not quite a potato and egg omelette, more like a crustless potato and egg pie. There are two ways to prepare this. The rugged, big armed Italian mother way by flipping the pan or the modern,  girly method of a little bit on the stovetop, followed by som browning  time under the broiler.
